In our lunch box this week is Mango Coconut Bites from @minimalist baker! These fruity energy bites are perfect to grab on a hot summer day! The healthy fats in these bites will keep you satiated and powering through your day!
◽️1 1/4 cup raw walnuts - protein, omega 3 fatty acids
◽️1 cup dried mango - fiber, vitamin A
◽️10 pitted dates - zinc, potassium, magnesium, iron
◽️2 tbsp hemp seeds - omega 3 and omega 6 fatty acids, iron, magnesium, zinc, and protein
◽️1/3 cup finely shredded coconut - fiber, iron, zinc
◽️1 medium lime zested
◽️1 pinch sea salt
✔️Toast walnuts in 350 degree oven for 8-12 minutes
✔️Soak dried mango in warm water for 5 minutes, drain, and pat off excess moisture
✔️Add walnuts to blender, pulse to a fine meal, remove and set aside
✔️Add pitted dates and soaked dried mango to blender, pulse until a dough forms
✔️Add walnut meal, hemp seeds, finely shredded coconut, lime zest, and sea salt, pulse to combine
✔️Scoop tablespoon amounts, roll into a ball, and roll in additional shredded coconut
✔️Store in container in refrigerator for 1 week or in freezer for 1 month
